West Suburban Couple Always Shared the Dream of Owning a Restaurant and Now their Opening their Second Location–Batavia will Soon Welcome Everdine's Grilled Cheese
Everdine's Grilled Cheese, the popular west suburban gourmet grilled cheese restaurant, is set to expand its footprint with a new location in Batavia, Illinois. Situated at 227 W. Wilson St., this marks the restaurant's second establishment following the success of its original Naperville location. Co-owners Brian and Kelly Herkert, who opened the Naperville spot in 2016, are thrilled to bring their culinary creations to Batavia, aiming for an opening either in late spring or early summer.
The Herkerts' journey into the restaurant business was inspired by their daughter, Everdine. After her birth, the couple began experimenting with various grilled cheese and soup recipes, driven by their backgrounds in the food industry and a shared dream of owning a restaurant. Their Naperville location fast became a local favorite, known for its handcrafted and unique grilled cheese sandwiches.
The Batavia location will continue the tradition of offering a diverse and delicious menu. One standout item is the turkey meltdown, which features a mouth-watering combination of cheddar, swiss, Boar’s Head turkey, crispy bacon, tomato, and chipotle mayo, all sandwiched between slices of Texas toast. For those who prefer to customize their meal, a build-your-own sandwich option is available, allowing guests to tailor their grilled cheese to their liking. Complementary offerings such as soups, salads, and sides round out the menu, ensuring a delightful dining experience for all patrons.
